We have the same problem, Inky did have the ability to create using HTML but have, without warning, taken it way. Please see their response to a recent support case we logged after it screwed up some customers signatures:
Hello Mark,
Thank you for providing your screenshots as well as information regarding how this was previously working in your tenancy.
After looking into this with our internal teams, we noticed that HTML was used in the disclaimer to customize your signatures. While some basic HTML may have worked previously, using HTML in Email Signatures was never officially supported in Inky. The good news is that with our latest updates, you now have more personalization options right in the user interface—so you can easily design your email signatures just the way you want, without needing to use HTML.
For more information into the styling and formatting of email signatures, feel free to reference this article.
If the use of HTML is something that you would like moving forward with your use of email signatures in INKY, we recommend leaving this as an idea on the feedback page below. If enough of our partners are looking for this, this could potentially be picked up into the backlog and pushed for.
This is causing us real issues after we had already setup customers signatures and had go lives planned for more also after doing considerable work on them. This was taken away without warning or any update to their knowledge articles, it was not discussed with us during onboarding either during which we discussed using HTML!!!!

You can still post HTML into the disclaimer text box. The updates haven’t changed that - I just validated that now.
